the cafe at Gypsy Palace
The decision to add espresso and tea service to Gypsy Palace was an easy
one. The neighborhood wanted their local coffee shop back after the last
one suddenly packed up and moved out. But critical to adding the cafe
was a discerning selection of menu items in order to support the
Gypsy Palace mission.
Without hesitation, Espresso Vivace was chosen as our coffee roaster.
David Schomer, the owner of Vivace, has demonstrated the passion and pursuit
of excellence that is the mark of a true artist and connoisseur. The coffee
itself is locally roasted and purchased in small quantities to insure
freshness. It has also been obtained from a grower that produces coffee
the old-fashioned way--that means minimal impact on the environment and
maximum support for the workers. Gypsy Palace is willing to pay a little
extra for this kind of assurance. You can read more about Espresso Vivace

comes from Travelers Tea Bar, also the supplier of our organic
Yerba Mate. Travelers does not yet have a website
but you can read reviews of their business by following the link in the
left sidebar. The other teas we serve are still being sourced, but for
now we have a small selection of green, black and herbal teas. Click HERE

Our flavor syrups are about 50% organic and we
are in the process of obtaining 100% organic status on the syrups. The
selection of flavors is intentionally limited in order to focus more on
the qualities of freshly-ground, properly-prepared espresso. Signature
coffee drinks will soon grace our menu to offer fun and seasonal alternatives.
We highly recommend the creamy, rich hot almond cocoa as an alternative
to caffeinated beverages. Further experimentation is necessary, but our
intention is to produce our own organic chocolate syrup for use at Gypsy
Palace.
